You can in every Sniper Elite and Zombie Army Trilogy / 4 which you may want to add as a spin off.

My favourite is the Sniper Elite 4 DLC where you follow Hitler on a tour of a U-Boat base and can kill him in like 10 ways. Poison food? No problem. Drop a U-Boat in a repair bay on him? Sure, why not. Shoot him in the testicle, blow up his boat with a mine etc.
