I feel like there's a lot of indie games that are kinda tryhards with their whole "having a goofy concept to market" shtick. Out of them, Skatebird is probably the most shitposty, so I'll keep it here as a rep.
I suppose part of it is that they don't have recognizable names to market with, so if they want to get attention for doing something silly it kinda falls into that camp. Even the bigger names can't really afford the risk that'd go into some stupid shit like Undertale Superstars Tennis (even though it would be the greatest video game ever made).

I don't know if you'd call this a shitpost, but Bubsy coming back in a super bland platformer definitely channels the meme energy of a recruiter sending you a Grumpy Cat photo to convince you to die for oil.

I would not have known the dot in the 7 Up logo was a mascot without this game. Seems okay too.
Okay, this is more to do with the business side of the game, but "company shelves mediocre hero shooter no one plays to rush out shitty battle royale no one plays" feels like a skit. Especially when one of the guys who ran the company left Epic Games, who would go on to make the game this is ripping off.
