I've been really enjoying the Redout cockpit view, though BNG is a bit too wobbly for my liking.

No Man's Sky personally insulted me by being too boring tho.

I should mention that this isn't merely a tabulation of games with fleshed out cockpit views, but is strongly biased towards titles I enjoy playing from inside the cockpit, or plan to try. It's a companion piece to Hipfire Blitz.
