@Detchibe: That's honestly the experience I've been trying to replicate in my search for games like these, because I found myself thinking about OSRS and New World and how both of these games let you fuck off to the woods for a quasi-idle game experience of chopping trees for an hour to increase your Wood Chopper level
because it's not really an idle game that I want, it's the idea of coming back to something in the long term to steadily improve a character/the world around me

gothic sort of has this vibe w grinding skills but it isn't quite that
zomboid is based heavily on ccda and u could prob make the same argument for similar sandbox-y roguelikes

would love for folks to tackle this in the form of like singleplayer graphical muds, which I'm not even sure exist, because it's a really fun format for it
@clownswords: Good call on each of those - I found that I wanted to draw the line short of including roguelikes because 1. they'd dominate the list, but also, 2. permadeath would ruin the fantasy for a lot of people, I think.

Maybe some PSO games like Blue Burst would fit nice but I haven't played it.
For Gothic, Arcania: Gothic 4 has a bit of that single-player MMO feel, but I still wouldn't include it.
For Xenoblade I would say it's X rather than 2
