Bloodborne - although old, it is one of the best souls games, with a theme that makes it very different to Elden Ring
Sekiro - although from From Software, it plays very differently. The combat is very different.
Persona 5 Royal is viewed as one of the best JRPG games ever made, but it is long and very involving.
Witcher 3 is older, but is about to have (Decmeber 14th) and update and refresh version out, free if you already have it.
