Elder Scrolls Oblivion is this in spades. One of my favorite exploits is maxing out the stealth skill from the very beginning by rubberbanding the control stick so your character indefinitely sneaks into a corner. And since there's an NPC close by who won't notice you unless you're right in front of the door to your cell, you can just put the controller down as you become a master of stealth before fighting a single rat. I unironically love that game.
